Oops, forgot to note that this is Silence speaking, and that you MUST use WHITE cornmeal. (That's why you don't need any kind of sweetener, since white cornmeal doesn't have that bitter undertaste that characterizes yellow cornmeal.)

Horrors, Becca!!! No oven?!!! It's bad enough that I can't bring myself to use the oven when it's hot out (whatever happened to outdoor bakehouses?!!), but to not have one at all would be a tragedy. We love our cornbread here, too, especially when we're having black bean soup or chili (then the next day for lunch with sharp Cheddar and apples). Your recipe does sound good, but of course I can't refrain from passing mine along, we love it so and it's so easy. Give it a try and see what you all think: Preheat oven to 425 degrees. Combine 1 1/2 cups white cornmeal, 3 T flour, 1 1/2 t baking powder, and 1 t salt in a large mixing bowl. Melt 3 T salted butter in a round 8- or 9-inch ovenproof cake or pie pan (I use glass). Remove pan when butter has melted, or allow to brown for more flavor. Add 1 cup milk, 1 beaten egg, a generous half-cup sour cream, and the melted butter to the dry ingredients and mix well. Pour batter into the hot pan (note: pre-greased, wasn't that clever?!) and bake at 425 for 20 (9" pan) to 25 minutes (8" pan). Cut into pie wedges, butter, and eat hot!

And how do you pronounce it? Do you say the word as if it has a double-M, or do you say DIL - EM - NUH ?

A fantastic idea and a fantastic poster, Becca! I'm trying to make every day this winter "buy nothing or at least as little as possible day." I'm not so good at resisting temptation---in fact, I'm hopeless---so I've learned not to look online or in catalogues or to go where the things that tempt me abound. Be it a newer skirt or a yummy pizza, if I don't see it, I won't get it!

Thank you for the birdseed ornament recipe!! I saw the same adds in catalogs, and wanted to figure out how to make them. I am a first grade teacher and every year my class makes some type of Christmas decoration to sell at our Holiday Fair. The children make them and we sell to raise money for Christmas presents for a local homeless shelter. This will help me and others so much!
