Scrumptious! Take a medium to large size zucchini or summer squash and slice with a vegetable peeler. You will have what appears to be lasagna noodles made of vegetables. These noodles are fairly durable and could easily be used as a substitute for wheat noodles in any dish. Sautee these noodles with butter, garlic, basil and black pepper for a taste sensation. Eat as a side dish or cover with spaghetti sauce and Italian cheeses. Delicioso!
